Egg Bhurji Sandwich

Ingredients of Egg Bhurji Sandwich

  • 2 egg
  • 1 tomato
  • 1 green chilli
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon coriander powder
  • salt as required
  • 1 tablespoon butter
  • 2 bread slices
  • 1 onion
  • 1 capsicum (green pepper)
  • 2 tablespoon coriander leaves
  • 1/4 teaspoon asafoetida
  • 1/2 teaspoon red chilli powder
  • 1/4 teaspoon garam masala powder
  • 1 tablespoon virgin olive oil
  • 1 tablespoon green chutney

How to make Egg Bhurji Sandwich

Step 1 Whisk the eggsCrack open the eggs in a bowl. Add a little bit of salt and whisk well.

Step 2 Saute the veggiesHeat oil in a pan. Add asafoetida, cumin seeds and let them splutter for a few seconds. Now add chopped onion and green chilli. Saute for a minute. Now add chopped tomato and capsicum. Mix and saute for 4-5 minutes.

Step 3 Add spicesAdd turmeric, red chilli powder, coriander powder, garam masala and salt. Mix well.

Step 4 Add the whisked eggNow add whisked eggs to the pan and quickly use a spatula to mix and scramble the eggs. Adjust the salt as per taste and cook the scrambled eggs until done. Finally, garnish with chopped coriander leaves and your Anda Bhurji is now ready to be stuffed in sandwiches.

Step 5 Make sandwichesTake a bread slice and spread butter on it. Spread mint chutney on another slice. Now stuff some of the Anda Bhurji in the slices to make a sandwich. If you wish, you can also grill the slices.
